Gluten Free Quesadilla

I rarely ate Mexican food in my life, until I found these taco shells. Between the corn and the flour tortillas, there really wasnt much I could do. Until now,

These tortilla's are quite possibly the best tasting GF tortilla without any corn or flour. They're made with brown rice, and they are fantastic, they almost smell like sourdough. But not quite.





The only complaint I have about them is that if you don't put them on a griddle and kind of make them crunchy, they'll fall apart easy. So I always put it in some olive oil and "fry" them for taco shells, and for quesadilla's, I always put them in my grill top cast iron pan. Today I put some cheddar cheese and some chicken on top of one shell.

& added my cute little bacon press. 



I always add Pace medium salsa to the top of the quesadilla, they're products are natural, theres nothing added that isnt meant to be in there, & they're gluten free. The chunks of tomatoes and peppers also are great.

The quesadilla comes off of my grill cast iron pan, to have some beautiful grill lines. The cheddar is gooey, and the tortilla's are crunchy.
