The Beginning

Hello all who may find this blog, I wanted to take a moment to just briefly say what my hopes and goals are for this website. Maybe I'll throw in a little about myself in the process.

The absolute goal of this blog is to show people that just because people have allergies and intolerances, doesn't mean food has to taste like crap. I'm sure some of you read that last sentence thinking that allergy friendly food doesn't taste like crap, but a good portion of the products do, and I always strive to do it differently.

See, I was born corn intolerant, which means any thing with high fructose corn syrup, corn syrup or anything with the word "corn" in it, I absolutely cannot digest. Which limited me from a young age. When I was 15, I found out from an anaphylactic reaction that I was allergic to mushrooms, I cant even open a fridge that has mushrooms inside uncovered. When I was 19, I came home from college for Christmas break and I knew there was something really wrong. I just had no idea what it was, I eventually had tests set up and it came back positive for a thyroid auto immune disease called Hashimoto's disease. It also came back positive for 30+ allergies including dairy & gluten. I remember being devastated, I loved cooking, I loved baking, what was I going to do? I remember getting even more frustrated when I went to the grocery store in Anchorage that sells the specialty food and finding so many distasteful foods. The gluten free food industry has gotten better over the years due to the "fad" thats currently going on but it really plays in my favor.

I need to be specific in that I am not a chef. I'm not trained except for the things I've taught myself, and the things my mom and my mother in law have taught me along the way. I am always striving to make myself better as a cook, a wife, and a healthy individual. I also have that thing inside me that is striving to be my idol, Julia Child.

The recipes that I share on this blog will often be found on popular websites like pinterest, or other blogs, I'll also be throwing in recipes from cookbooks that are famous or not so much, but my twist will be making them allergy friendly. I'm always open to suggestions in terms of what kind of food or allergy fix you'd like. & I'm very hopeful and excited to see where this blog, the recipes, and experience of pushing myself in the kitchen will take me.

I will start posting pictures and blog updates as soon as I get this blog up and running a little more efficiently.
