A few years ago, when I was first diagnosed with the whole big shabang. I wanted to find a quick-easy-cheap- delicious meal... & This is what evolved.
Start with a pot of water, deep enough for a box of pasta
& Light up a grill, indoors or outdoors
Then prep some chicken, I got this boneless, skinless chicken breast from our local butcher shop. (Free Range happy little chickens) Thaw it & salt and pepper that chicken.
Once the water is boiling, throw in your GF pasta of choice. I use this brand, & for this recipe, I always use spirals. Or try to.
Once the chicken is done-- cooked all the way through, trim the fat and weird pieces off. Then cube the rest.
Drain your pasta. Make sure you don't overcook gluten free noodles, they will get super mushy.
Then I get my pesto ready. Which means I peal the plastic off.
I use 2 containers, I like it with extra garlic&basil
Throw in all your chicken & pesto on top of your noodles & mix together
serve out, & top with some parmesan cheese
dont mind my overly messy table... & enjoy!
